We did what most families do once summer hits and took full advantage of the beautiful weather. My Kindergartner is officially done with school and we have a future first grader on our hands. It’s like magic! Oh, and I’m all in on these fried eggs! It’s amazing to see what a little knob of butter can do to a fried egg. Say what?! Ya, you guys, I’m being 100% honest. I am obsessed with fried eggs lately! And not just with eating them even though they are absolutely delectable. Layers of mozzarella cheese, turkey, avocado, spicy red salsa and a fried egg sandwiched between a toasted whole wheat english muffin that is created in 15 minutes or less for a satisfying and delicious meal.
